Step-by-Step Instructions
  1. In a skillet over medium heat, drizzle in olive oil and add sliced onions. Sauté until translucent, about 3-4 minutes. Add minced garlic and cook for another 30 seconds.
  2. Add thawed and drained spinach to the skillet. Stir to combine and cook for 2-3 minutes. Season with salt and pepper, then blend in sour cream.
  3. Preheat your oven to 175°C (347°F). Pat salmon dry with a paper towel and season both sides with salt and pepper. In another skillet, sear each side for about 2 minutes until golden brown.
  4. Grease a baking dish with olive oil and place the sautéed salmon skin-side down. Spoon the creamy spinach mixture over each piece, then sprinkle mozzarella cheese on top.
  5. Bake for 15-20 minutes until the salmon is opaque and flakes easily. The cheese should be golden and bubbly.
  6. Remove the dish from the oven and let it rest for a few minutes. Plate each salmon fillet with creamy spinach and enjoy.
