  • 1 cup Sushi Rice Short-grain preferred
  • 1.25 cups Water
  • 2 tablespoons Unseasoned Rice Vinegar
  • 1 tablespoon White Granulated Sugar
  • 1 teaspoon Salt
  • 1 cup Vegetable Oil For frying
For the Filling
  • 8 oz Sushi-Grade Ahi Tuna Fresh, can substitute with smoked salmon
  • 3 tablespoons Japanese Kewpie Mayonnaise Regular mayonnaise can be substituted
  • 1 tablespoon Sriracha Sauce Adjust to taste
  • 1 teaspoon Soy Sauce
  • 1 tablespoon Freshly-Squeezed Lime Juice Fresh is recommended
For the Assembly
  • 1 medium Avocado Ripe but firm
  • Jalapeños Optional
  • Sesame Seeds For garnish

Method
 

Step-by-Step Instructions
  1. Rinse the sushi rice under cold water until clear, then cook with water until tender and absorbent.
  2. Combine rice vinegar, sugar, and salt over low heat until dissolved, then fold into cooled rice.
  3. Press seasoned rice into a baking dish to form an even layer, cool completely and refrigerate.
  4. Cut the chilled rice into rectangles for portions.
  5. Heat vegetable oil and fry rice pieces until golden brown and crispy. Drain on paper towels.
  6. Mix mayonnaise, sriracha, soy sauce, and lime juice to create the spicy mayo.
  7. Dice the tuna, mix with spicy mayo, slice avocado and prepare jalapeños.
  8. Assemble by layering crispy rice, avocado, and spicy tuna mix, and garnish with sesame seeds.
