Step-by-Step Instructions
  1. Begin by placing 1 1/3 cups of rolled oats into a food processor. Pulse the oats for about 30 seconds until they are finely chopped and resemble flour.
  2. Next, add 125g of frozen blueberries, 2/3 cup of desiccated coconut, 1 tablespoon of coconut oil, and 2 tablespoons of water to the processor. Blend for approximately 30 seconds until well combined.
  3. Once the mixture is ready, transfer it onto a clean surface and shape it into a log. Cut the log into 20 equal pieces. Using damp hands, roll each piece into a smooth ball.
  4. To finish, place 1/4 cup of extra desiccated coconut on a plate. Roll each ball in the coconut to coat thoroughly.
