  • 2 cups Cucumbers Diced, preferably English cucumbers
  • 1 cup Cherry Tomatoes Halved
  • 1 medium Red Onion Sliced or diced
  • 1/4 cup Cilantro Chopped
For the Dressing
  • 1/4 cup Olive Oil
  • 2 tablespoons Lime Juice Freshly squeezed
  • 1 teaspoon Salt To taste
  • 1 teaspoon Pepper To taste

Method
 

Preparation Steps
  1. Wash and dice the cucumbers, tomatoes, and red onion.
  2. Soak diced red onion in cold water for about 10 minutes if desired.
  3. In a large salad bowl, combine the diced cucumbers, tomatoes, and red onion.
  4. Finely chop the cilantro and add to the bowl. Toss gently.
  5. Drizzle olive oil and lime juice over the salad. Season with salt and pepper.
  6. Toss everything together until well coated and let it sit for 10-15 minutes.
  7. Give a gentle toss before serving.
