Step-by-Step Instructions
  1. In a medium bowl, combine the shredded chicken with buffalo sauce, stirring until well-coated. Set aside.
  2. Take two slices of bread, layer half of the cheddar cheese on one slice, followed by the buffalo chicken mixture, mozzarella cheese, and remaining cheddar. Top with the second slice of bread.
  3. Heat a skillet over medium heat and melt 1 tablespoon of butter. Place the sandwich in the skillet and grill for 3-4 minutes until golden.
  4. Flip the sandwich, add remaining butter, and grill for another 3-4 minutes until the second side is golden and cheese is melted.
  5. Remove the sandwich from the skillet and let it rest for about a minute. Cut in half and garnish with green onions or blue cheese if desired.
