  • 2 cups all-purpose flour
  • 1/4 teaspoon salt omit if using salted butter
  • 1 cup finely chopped pecans
For the Coating
  • 1 cup powdered sugar

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Stir in vanilla extract and a pinch of salt, then gradually add flour and chopped pecans.
  4. Roll the dough into 1 inch balls and place on line baking sheet.
  5. Bake for 8-10 minutes until set but pale, then cool for 5 minutes.
  6. Roll warm cookies in powdered sugar, then cool completely and roll in sugar again for an extra coating.
