For the Creamy Layer
  • 1 cup Sour Cream Greek yogurt can be used as a healthier alternative.
  • 1/2 cup Mayonnaise Consider omitting or using more sour cream.
  • 1 can Diced Green Chiles Fresh chiles or jalapeños can be used.
For the Topping
  • 2 cups Cheddar Cheese, Fiesta Blend Any shredded cheese of your choice works.
  • 1 tsp Garlic Powder Fresh garlic is an alternative.
  • 1 cup Salsa (mild) Spicier salsa can be used for heat.

Method
 

Preparation Steps
  1. Preheat the oven to 350°F (175°C) and prepare a 9x13-inch baking dish with cooking spray.
  2. In a skillet over medium heat, cook the ground beef for 6-8 minutes until browned. Drain excess fat.
  3. Add yellow onion and red bell pepper to the skillet, stir in the taco seasoning, and cook for 4-5 minutes until veggies are tender.
  4. In a mixing bowl, combine biscuit mix and water; stir until smooth. Fold in sour cream and mayonnaise.
  5. Layer cooked beef and veggies in the greased baking dish, then pour biscuit batter over.
  6. Sprinkle shredded cheese and diced green chiles over the top.
  7. Bake in the preheated oven for 35-40 minutes until golden brown and bubbly.
  8. Allow to cool for 5-10 minutes before serving.
