Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a large bread loaf pan.
  2. In a large mixing bowl, combine the flour, baking soda, salt, sugar, sharp cheddar cheese, parmesan cheese, chopped rosemary, and thyme leaves.
  3. Gradually stir in buttermilk to the dry mixture until a thick batter forms.
  4. Pour the batter into the greased loaf pan and bake for 35-40 minutes.
  5. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely and freeze for at least 2 hours.
  6. Preheat your oven to 400°F (200°C) and cut the chilled loaf into ⅛-inch slices.
  7. Arrange slices on an ungreased baking pan and bake for 12-15 minutes, or until golden.
  8. Allow the crackers to cool completely on a wire rack before serving.
