- In a saucepan, combine 1 cup of water, 1 cup of fresh lemon juice, and 1 cup of granulated sugar. Bring this to a boil over medium heat, stirring until sugar fully dissolves, about 2-3 minutes. Remove from heat, let cool slightly, blend with 2 cups of chopped peaches until smooth, then strain.
- In a blender, add 2 cups of ice, 1 cup of coconut milk, and ½ cup cream of coconut. Blend on high for 30-45 seconds until smooth and slushy.
- Pour slushy base into tall glasses, filling three-quarters full. Drizzle peach syrup over the top.
