- Preheat your oven to 350°F (175°C) and prepare a mini muffin pan.
- Combine cottage cheese, rolled oats, applesauce or grated apple, egg, cinnamon, honey or maple syrup, baking powder, and salt in a mixing bowl.
- Let the mixture rest for about 5 minutes to allow oats to absorb moisture.
- Spoon the batter into the prepared mini muffin pan, filling each cup nearly to the top.
- Bake for 18-20 minutes until golden brown; a toothpick should come out clean.
- Cool for a few minutes, then transfer to a wire rack to cool completely.
