For the Rolls
  • 1 cup pitted Medjool dates
  • 1 cup unsweetened shredded coconut for coating
  • 1 cup almonds optional
For Coating (if desired)
  • cup extra shredded coconut

Equipment

  • Food processor
  • Large Plate

Method

Step-by-Step Instructions
  1. Begin by placing 1 cup of pitted Medjool dates into your food processor. Pulse the dates for about 30 seconds until they break down into a sticky paste.
  2. Once you have your sticky date paste, use your hands to scoop out small amounts and roll them into bite-sized balls, about one inch in diameter.
  3. On a large plate, place ⅓ cup of unsweetened shredded coconut. Roll each date ball gently in the coconut until they are evenly coated on all sides.
  4. If you’re using almonds, gently press one into the center of each roll now for a delightful crunch.
  5. For an extra firm texture, you may choose to chill your Coconut Date Rolls in the refrigerator for about 15-20 minutes.
  6. Your Coconut Date Rolls are now ready to be enjoyed! Serve them as a quick snack or dessert.
