Step‑by‑Step Instructions
  1. In a large pot, heat 2 tablespoons of olive oil over medium heat. Once shimmering, add one chopped onion and sauté for about 3-4 minutes until it's translucent and soft.
  2. Stir in 3 minced garlic cloves and 1 tablespoon of grated ginger, cooking for another minute.
  3. Next, add one diced red bell pepper to the pot and sauté for 3-4 minutes until it softens slightly.
  4. Pour in one can of coconut milk and 2 cups of fish or chicken broth, stirring to combine all the ingredients.
  5. Incorporate 2 tablespoons of fresh lime juice, 1 tablespoon of fish sauce, and 1 teaspoon of sugar into the simmering soup.
  6. Gently add 1 pound of white fish fillets cut into bite-sized pieces to the pot and allow to simmer for about 5-7 minutes until the fish is cooked through.
  7. Remove the pot from heat and stir in a handful of chopped fresh cilantro.
