Step-by-Step Instructions
  1. In a large mixing bowl, add 1 cup of cottage cheese and 1 can of rinsed chickpeas. Follow by adding halved cherry tomatoes, diced cucumber, finely chopped red onion, and freshly chopped parsley. Gently fold everything together with a spatula for about 1-2 minutes until well mixed.
  2. In a small bowl, whisk together the juice of one lemon, 2 tablespoons of olive oil, and a pinch of salt and pepper. Add 1 teaspoon of ground cumin and whisk for about 30 seconds until the dressing is smooth.
  3. Drizzle the prepared dressing over the salad mixture and gently toss for about 1 minute to coat every ingredient evenly.
  4. Taste the salad and adjust seasoning with more salt, pepper, or lemon juice as needed.
  5. Serve by placing torn lettuce leaves on a platter and spooning the salad mixture on top.
  6. If you have time, cover the salad and refrigerate for 30 minutes before serving to meld flavors.
