Preparation Steps
- Preheat your oven to 350°F (175°C) and prepare a greased 9x5-inch loaf pan.
- In a large bowl, mash 2-3 ripe bananas until smooth and creamy.
- Add 2 large eggs, 1 cup cottage cheese, 1/4 cup maple syrup, and 1 teaspoon vanilla extract to the bananas, and mix well.
- Gradually stir in 1 1/2 cups almond flour, 1 teaspoon baking soda, and 1 teaspoon ground cinnamon until just combined.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50 to 60 minutes until golden brown; a toothpick should come out clean.
