Step-by-Step Instructions for Orzo Soup
  1. In a large soup pot, heat 2 tablespoons of extra virgin olive oil over medium-high heat. Add 1 chopped onion, 1 diced carrot, and 1 diced celery stalk. Sauté for about 5 minutes until the vegetables soften.
  2. Introduce 2 minced garlic cloves, 1 teaspoon of dried basil or thyme, and 1 tablespoon of flour to the pot. Stir for 1 minute until the garlic is fragrant.
