  2. Sauté minced garlic in the reserved bacon fat for 1–2 minutes until fragrant and lightly golden. Set aside.
  3. Whisk together eggs, egg yolk, Parmesan cheese, and black pepper in a mixing bowl. Gradually mix in reserved bacon fat until smooth.
  4. Cook pasta in salted boiling water according to package instructions for about 9–11 minutes until al dente. Reserve 1 cup of pasta water.
  5. Quickly combine hot pasta with sautéed garlic in the skillet off the heat, then mix in the egg and cheese mixture, adding reserved pasta water as needed.
  6. Fold in crispy bacon and let the dish rest for a couple of minutes to meld flavors.
  7. Serve immediately, garnishing with additional Parmesan and parsley if desired.
