  • 1 tablespoon Lemon Juice Essential for a zesty kick.
  • 1 tablespoon Cornstarch Optional, for a thicker compote texture.

Method
 

Step-by-Step Instructions
  1. In a medium saucepan over medium heat, combine blueberries, honey, and lemon juice and simmer for 5 minutes until softened. If desired, add cornstarch mixed with water and simmer until thickened.
  2. In a mixing bowl, combine Greek yogurt and vanilla extract, whisking until smooth. Adjust sweetness with more honey or maple syrup as needed.
  3. Fill silicone molds or mini muffin tin about 3/4 full with yogurt mixture, packing gently.
  4. Add a spoonful of cooled blueberry compote on top of each yogurt-filled cavity and gently swirl with a toothpick.
  5. Place the molds in the freezer for at least 3 hours until firm.
  6. Gently pop the frozen bites out of the molds and store in an airtight container in the freezer.
