Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil in a large pan over medium heat until shimmering.
  2. Add 1 finely chopped yellow onion and 3 minced garlic cloves. Sauté for about 5 minutes until translucent.
  3. Stir in 1/2 cup sun-dried tomatoes, 2 tablespoons tomato paste, 1 teaspoon Italian seasoning, red chili flakes, and salt. Cook for 3 minutes.
  4. Pour in 1 cup vegetable broth and 1 can coconut milk. Stir until a creamy sauce forms, about 1-2 minutes.
  5. Add 2 cans drained chickpeas to the pan, cover, and simmer for 2-3 minutes.
  6. Stir in 2 cups fresh spinach or basil leaves. Cook for 1-2 minutes until wilted.
