Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  2. In a skillet, heat oil over medium heat and sauté chopped red bell pepper and onion for 8 minutes.
  3. In a mixing bowl, combine cooked rice, sour cream, cream of celery soup, chopped green chiles, and corn.
  4. Add sautéed pepper and onion along with 1 cup of shredded Pepper Jack cheese. Mix thoroughly.
  5. Spread the mixture in the greased baking dish and cover with foil. Bake for 30 minutes.
  6. Remove foil and sprinkle remaining shredded Pepper Jack cheese on top. Bake uncovered for 10 minutes.
