- In a blender, combine 2 cups of cottage cheese, 1/4 cup of sweetener, 1 cup of pistachio nuts, 1 teaspoon of vanilla extract, and 1 tablespoon of lemon juice. Blend on high for about 1–2 minutes until smooth and creamy.

- Pour the blended mixture into a freezer-safe container, smoothing the top. Cover tightly and freeze for at least 3-4 hours until firm.
- When ready to serve, remove from the freezer and let sit at room temperature for 5-10 minutes to soften. Use a warm scoop for smooth servings.
