- Heat 2 tablespoons of olive oil in a large pot over medium heat. Add 1 chopped onion and 2 cloves of minced garlic. Sauté for about 5 minutes until translucent.
- Stir in 3 cups of roasted red peppers and sauté for an additional 2-3 minutes.
- Pour in 4 cups of vegetable or chicken broth and bring to a simmer. Let it bubble for about 15 minutes.
- Remove the pot from heat and add 1 cup of shredded aged Gouda cheese and 1 cup of heavy cream. Stir until the cheese melts and use an immersion blender to puree until smooth.
- Taste and season with salt and pepper. Return to low heat if needed to warm before serving.
