  • 1 cup Aged Gouda Cheese shredded; substitute with smoked cheddar if needed
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 4 cups Vegetable or Chicken Broth low-sodium recommended
  • 1 cup Heavy Cream coconut milk can be a dairy-free substitute
  • 2 tablespoons Olive Oil for sautéing
  • to taste Salt and Pepper

Method
 

Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil in a large pot over medium heat. Add 1 chopped onion and 2 cloves of minced garlic. Sauté for about 5 minutes until translucent.
  2. Stir in 3 cups of roasted red peppers and sauté for an additional 2-3 minutes.
  3. Pour in 4 cups of vegetable or chicken broth and bring to a simmer. Let it bubble for about 15 minutes.
  4. Remove the pot from heat and add 1 cup of shredded aged Gouda cheese and 1 cup of heavy cream. Stir until the cheese melts and use an immersion blender to puree until smooth.
  5. Taste and season with salt and pepper. Return to low heat if needed to warm before serving.
