Step-by-Step Instructions
  1. Heat olive oil in a 12-inch skillet over medium heat. Season shrimp with chili powder and salt, then cook for 3-4 minutes until pink and opaque. Remove shrimp and set aside.
  2. In the same skillet, melt butter, add onions, and sauté for about 4 minutes until soft. Add garlic and sauté for an additional 2 minutes.
  3. Stir in corn and smoked paprika, cooking for 1 minute to warm through.
  4. Pour in half-and-half, bringing to a simmer. Stir in feta cheese until melted and incorporated.
  5. Squeeze lime juice into the sauce and return shrimp to the skillet, reheating for about 2 minutes.
  6. Garnish with remaining corn, lime slices, and cilantro for serving.
