  • 4 pieces boneless, skinless chicken breasts
  • 2 pieces fresh limes (juiced) bottled lime juice can be used as an alternative
For the Creamy Mixture
  • 1 packet ranch dressing substitute with homemade ranch seasoning if desired
  • 8 ounces cream cheese Neufchâtel cheese can be used for a lighter option
For the Veggies
  • 10 ounces Rotel diced tomatoes and green chilies can be replaced with plain diced tomatoes if desired
  • 1 cup corn (drained) frozen corn works well
  • 1 can black beans (drained and rinsed) can swap for kidney beans or omit
  • 1 teaspoon onion powder fresh onion can be used sparingly
  • 1/2 teaspoon ground black pepper white pepper can be substituted
For the Broth
  • 1 cup chicken broth vegetable broth works for a vegetarian version

Method
 

Preparation Steps
  1. Begin by placing your thawed boneless, skinless chicken breasts in the bottom of your slow cooker.
  2. Layer the drained black beans, drained corn, and Rotel diced tomatoes over the chicken. Sprinkle onion powder and ground black pepper on top.
  3. Squeeze fresh lime juice over the mixture and pour in the chicken broth.
  4. Place a block of cream cheese on top of the mixture.
  5. Cover the slow cooker and set it to cook on HIGH for 3–4 hours, or LOW for 5–6 hours.
  6. Once cooked, carefully remove the chicken and shred it using two forks.
  7. Return the shredded chicken to the pot and mix thoroughly.
  8. Serve your Creamy Slow Cooker Fiesta Chicken on warm tortillas, over rice, or on nachos.
