Preparation Steps
- Begin by placing your thawed boneless, skinless chicken breasts in the bottom of your slow cooker.
- Layer the drained black beans, drained corn, and Rotel diced tomatoes over the chicken. Sprinkle onion powder and ground black pepper on top.
- Squeeze fresh lime juice over the mixture and pour in the chicken broth.
- Place a block of cream cheese on top of the mixture.
- Cover the slow cooker and set it to cook on HIGH for 3–4 hours, or LOW for 5–6 hours.
- Once cooked, carefully remove the chicken and shred it using two forks.
- Return the shredded chicken to the pot and mix thoroughly.
