For Seasoning and Liquid
  • 4 cups Vegetable Stock Low-sodium recommended.
  • 1 teaspoon Black Pepper
  • 1 teaspoon Salt
  • 1 teaspoon Paprika
  • ½ teaspoon Cinnamon
  • 1 teaspoon Turmeric
  • ½ teaspoon Dried Rosemary Optional.
  • ½ teaspoon Dried Thyme Optional.

Preparation Steps
  1. Heat the oil in a large pot over medium heat until shimmering.
  2. Sauté onion, carrots, sweet potatoes, and garlic for about 10 minutes.
  3. Add vegetable stock and spices, bring to a gentle boil.
  4. Simmer until sweet potatoes are tender, or cook in Instant Pot for 10 minutes.
  5. Blend the soup until smooth using an immersion blender.
  6. Adjust seasoning and serve warm.
