Step-by-Step Instructions
  1. In a medium saucepan, pour in 1 cup of coconut milk and ¼ cup of evaporated milk. Gently heat the mixture over low heat for about 5 minutes, stirring occasionally until warm.
  2. Sprinkle in ¾ tablespoon of cornstarch while continuously whisking. Keep whisking for about 3 minutes until fully dissolved and the mixture slightly thickens.
  3. Remove from heat, stir in 3 tablespoons of sweetened condensed milk, a pinch of salt, and ¼ teaspoon of vanilla extract. Mix well until smooth and creamy.
  4. Allow to cool to room temperature for approximately 15-20 minutes. Transfer to an airtight container and freeze. Stir every 30-45 minutes for the first 2-3 hours.
  5. After regular stirring, let freeze until fully firm, about 6 hours or overnight. Before serving, let sit at room temperature for about 5 minutes.
