- Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
- In a large skillet, cook chopped bacon over medium-low heat until crispy, about 7–10 minutes. Transfer to a paper towel-lined plate.
- In the same skillet with reserved bacon grease, sauté diced onion until translucent, about 5 minutes.
- Add chopped mushrooms; cook for 5–7 minutes until browned, then add minced garlic and cook for 1 more minute.
- Stir in cream of mushroom soup, bacon, milk, and Monterey Jack cheese until melted and creamy.
- Fold in drained green beans until well-coated in the sauce.
- Transfer mixture to the prepared baking dish, spreading evenly. Top with French fried onions.
- Bake uncovered for 30 minutes until bubbly and the onion topping is golden brown.
