Method
 

Preparation Steps
  1. Wash and dry the zucchinis thoroughly. Slice them into even rounds, aiming for 1/4 inch thickness.
  2. In a shallow bowl, combine panko breadcrumbs, Parmesan cheese, salt, pepper, and optional seasonings.
  3. In another bowl, crack and beat the eggs until fully mixed.
  4. Set up a bowl with all-purpose flour as a primer for the zucchini slices.
  5. Dredge each zucchini slice in the flour, then dip in the egg wash, and finally coat with the panko mixture.
  6. Arrange the breaded zucchini slices in a single layer in your air fryer basket.
  7. Lightly spray the zucchini chips with cooking spray. Set air fryer to 375°F and cook for 6 minutes.
  8. After 6 minutes, flip each chip, spray again, and cook for an additional 5 minutes.
  9. Remove the chips from the air fryer and allow to cool slightly before serving.
