  • 1 cup Sweet Potato Cold, cooked and mashed
  • 1 medium Zucchini Well-drained
  • 1/4 cup Coconut Flour Or substitute with all-purpose or oat flour

Method
 

Instructions
  1. Preheat your oven to 160°C (350°F) and line a baking tray with parchment paper.
  2. Grate one medium zucchini and squeeze out excess moisture using a clean kitchen towel.
  3. In a large mixing bowl, combine the drained zucchini, cooked sweet potato, and coconut flour.
  4. Shape the mixture into bite-sized tots and place them on the prepared baking sheet.
  5. Bake for 25-35 minutes, flipping halfway through for even crispiness.
  6. Allow to cool for a few minutes before serving warm.
