Step-by-Step Instructions
  1. Preheat your oven to 450°F (232°C).
  2. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add diced yellow onion and sauté for about 5 minutes until translucent.
  3. Add minced garlic and chipotle pepper to the skillet. Sauté for 1-2 minutes, then stir in chili powder, ground cumin, smoked paprika, and tomato paste, cooking for an additional 2 minutes.
  4. Incorporate canned black beans and vegetable broth, mixing well. Bring to a simmer for about 5 minutes and mash some beans for texture. Stir in lime juice, salt, and pepper to taste.
  5. Wrap corn tortillas in a damp paper towel and microwave for 30 seconds to soften.
  6. Line a baking sheet with parchment paper, take a warmed tortilla, fill it with black bean mixture, and sprinkle cheese on top. Fold and repeat with all tortillas.
  7. Bake in the preheated oven for 8-10 minutes, flipping halfway through for even cooking.
  8. Let the tacos cool slightly before serving with desired toppings.
