  • 1 cup Sweet Corn canned, drained well
  • 1 cup Ham can substitute with bacon or salami
  • 2 scallions Chopped Scallions
For the Dressing
  • 1/2 cup Mayonnaise Greek yogurt can be substituted
  • 2 tablespoons Lemon Juice or vinegar for tang
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper adjust to taste

Method
 

Preparation Steps
  1. Remove outer leaves of the cabbage and slice it into thin strips, about 1/4-inch thick.
  2. Dice cucumbers into small cubes (approximately 1/2-inch) and chop the ham into similar-sized pieces.
  3. In a large bowl, combine cabbage, cucumbers, sweet corn, and ham pieces. Add chopped scallions and mix.
  4. In a small bowl, whisk together mayonnaise, lemon juice, salt, and pepper until smooth.
  5. Pour dressing over the salad mix and gently fold together, ensuring ingredients are evenly coated.
  6. Serve immediately or cover and chill in the refrigerator for about 30 minutes before serving.
