Step-by-Step Instructions for Cantonese Chow Mein
  1. Prepare Noodles: Boil water, pour it over chow mein noodles in a heatproof bowl, and soak for 30 seconds to 1 minute, then drain.
  2. Mix Sauce: Whisk together dark soy sauce, regular soy sauce, oyster sauce, fish sauce, sugar, and water until sugar is dissolved.
  3. Sauté Aromatics: Heat corn oil in a wok, add yellow onions and whites of green onions, sauté for about 1 minute until fragrant.
  4. Pan-Fry Noodles: Add corn oil to wok, then add drained noodles. Cook undisturbed for 2 minutes, flip and cook for another 2 minutes.
  5. Combine Ingredients: Add sautéed onions, green onion tops, and bean sprouts. Pour in sauce and mix gently for 1-2 minutes.
  6. Finish & Serve: Drizzle with sesame oil, toss gently, and serve immediately.
