Method
 

Step‑by‑Step Instructions
  1. In a large skillet, brown ground beef with chopped onion over medium heat for 5-7 minutes until no longer pink. Add minced garlic, chili powder, cumin, paprika, and seasonings. Stir in tomato sauce and simmer for 2 minutes.
  2. Warm tortillas in a skillet or microwave. If using a skillet, warm for about 30 seconds on each side. If using a microwave, wrap in a damp paper towel and heat in 30-second intervals until warm.
  3. Lay a warm tortilla flat, spoon 2 tablespoons of the beef mixture along the center, sprinkle with 2 tablespoons of shredded cheese, and roll tightly.
  4. Preheat oven to 425°F (220°C) and arrange taquitos seam-side down on a parchment-lined baking sheet. Brush or spray with cooking oil, and sprinkle extra cheese on top.
  5. Bake taquitos for 15-18 minutes or until golden brown and crispy. Broil for an additional 1-2 minutes if desired.
  6. Remove from the oven and cool slightly. Serve warm with sour cream, guacamole, or salsa.
