- Preheat your oven to 425°F (220°C) and prepare a cookie sheet with nonstick spray or oil.
- Grate the zucchini and drain it in a colander for about 5 minutes to remove excess moisture.
- In a large mixing bowl, combine the drained zucchini, panko, cheddar, eggs, cornstarch, and seasonings. Stir well.
- Scoop out portions of the mixture, form them into small tots, and place them on the prepared baking sheet.
- Bake in the preheated oven for 18 to 22 minutes until golden brown and crispy.
