  • 1 tablespoon Lime Juice adjust to taste
  • 1 tablespoon Rice Vinegar for acidity

Step-by-Step Instructions
  1. Pat the shrimp dry with paper towels and set aside.
  2. Prepare three shallow dishes: combine flour with seasonings in the first, beat eggs in the second, and place shredded coconut in the third.
  3. Dredge shrimp in flour, dip in eggs, and roll in coconut, pressing gently to adhere.
  4. Heat vegetable oil in a deep skillet to 350°F (175°C).
  5. Fry the shrimp in batches for 2-3 minutes per side, or until golden brown.
  6. Transfer fried shrimp to a plate lined with paper towels to drain excess oil.
  7. Mix mayonnaise, sweet chili sauce, lime juice, and rice vinegar in a bowl to make the dipping sauce.
  8. Serve shrimp on a platter with sweet chili mayo on the side and lime wedges.
