For the Fried Rice
  • 2 tbsp Vegetable Oil Used for frying at high heat.
  • 3 large Eggs Scramble gently until just set.
  • 1 lb Boneless, Skinless Chicken Breast Diced; can substitute with tofu or shrimp.
  • Salt
  • Black Pepper
For the Savory Sauce
  • 1 tbsp Soy Sauce Adjust to taste.
  • 1 tbsp Oyster Sauce
  • 1 tbsp Fish Sauce Can be replaced with broth and vinegar.
For the Flavor Boosters
  • 4 cloves Garlic Minced; stir continuously to avoid burning.
  • 1 cup Mixed Vegetables e.g., peas, carrots, corn.
  • 2 Green Onions Chopped.
  • 1 tbsp Sesame Oil
For Garnish
  • Fresh Cilantro For garnish.

Method
 

Cooking Steps
  1. Cook jasmine rice according to package instructions, then let it cool for at least 15–20 minutes.
  2. Heat 1 tablespoon of vegetable oil in a pan over medium heat and scramble the eggs until just set.
  3. Increase heat to medium-high, add remaining oil, and stir-fry chicken for about 5 minutes until golden brown.
  4. Add minced garlic, stirring continuously for about 1 minute until fragrant.
  5. Stir in mixed vegetables and cook for 2–3 minutes until tender.
  6. Incorporate cooled rice, soy sauce, oyster sauce, and fish sauce, stir-frying for 3–4 minutes.
  7. Fold in scrambled eggs gently until well mixed.
  8. Add chopped green onions and sesame oil, stirring for another 1–2 minutes.
  9. Garnish with fresh cilantro and serve hot.
