Steps to Make Potato Patties
- In a large mixing bowl, add cold, leftover mashed potatoes and one large egg. Combine thoroughly using a fork.
- Gently fold in grated yellow onion, all-purpose flour, kosher salt, and black pepper with the fork.
- Heat about ½ inch of canola oil in a frying pan over medium-high heat until it reaches 350°F.
- Scoop scant ½ cups of the potato mixture and shape into patties. Carefully drop into hot oil.
- Fry the patties for 2.5 to 3 minutes on one side until golden brown, then flip and cook for 2 to 2.5 minutes on the other side.
- Transfer fried patties to a cooling rack set over paper towels to drain excess oil.
