Ingredients
  

For the Fritters
  • 2 cups Rhubarb chopped finely
  • 1 cup Sugar for the rhubarb prep and fritters
  • 1 cup Flour you can substitute with gluten-free flour
  • 2 teaspoons Baking Powder
  • 1/2 teaspoon Salt
  • 1 teaspoon Cinnamon
  • 1/2 teaspoon Nutmeg
  • 1 large Egg
  • 3/4 cup Milk buttermilk works best
  • 1 teaspoon Vanilla or substitute with almond extract
  • Oil for frying coconut or canola oil is recommended
For the Sweet Vanilla Glaze
  • 1 cup Icing Sugar
  • 2 tablespoons Milk adjust the consistency
  • 1 teaspoon Vanilla

Method
 

Prepare the Fritters
  1. Chop fresh rhubarb into small, even pieces, toss with sugar and let sit for about 10 minutes.
  2. In a medium bowl, whisk flour, baking powder, salt, cinnamon, and nutmeg until well combined.
  3. In a separate bowl, beat an egg and add milk and vanilla extract, whisk until combined.
  4. Pour the wet mixture into the dry ingredients and stir until just incorporated.
  5. Gently fold in the sugared rhubarb until evenly distributed.
  6. Heat oil to 350°F (175°C) in a deep pot or skillet.
  7. Drop spoonfuls of the batter into the hot oil and fry for about 2 minutes per side.
  8. Remove fritters and drain on paper towels.
  9. Whisk icing sugar, milk, and vanilla in a small bowl until smooth for the glaze.
  10. Drizzle glaze over warm fritters and serve immediately.
