Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Drain and rinse the garbanzo beans under cold water and inspect them, removing any loose skins.
  3. Pat the chickpeas dry thoroughly with a clean kitchen towel.
  4. Line a large baking sheet with a silicone mat or parchment paper, lightly spraying it with oil if using parchment.
  5. Spread the dried chickpeas evenly across the prepared baking sheet in a single layer.
  6. Roast the chickpeas for 20–30 minutes, stirring every 10 minutes until golden brown and crispy.
  7. While the chickpeas are roasting, prepare the sweet, ranch, and spicy flavor mixtures in small bowls.
  8. When they are done roasting, divide the chickpeas among the bowls and toss with the corresponding flavor mixtures.
  9. For set flavor, return the chickpeas coated in sweet mixture to the oven for an additional 5–10 minutes.
  10. Remove all variations from the oven and let them cool slightly before serving.
