- Preheat your oven to 400°F (200°C).
- Drain and rinse the garbanzo beans under cold water and inspect them, removing any loose skins.
- Pat the chickpeas dry thoroughly with a clean kitchen towel.
- Line a large baking sheet with a silicone mat or parchment paper, lightly spraying it with oil if using parchment.
- Spread the dried chickpeas evenly across the prepared baking sheet in a single layer.
- Roast the chickpeas for 20–30 minutes, stirring every 10 minutes until golden brown and crispy.
- While the chickpeas are roasting, prepare the sweet, ranch, and spicy flavor mixtures in small bowls.
- When they are done roasting, divide the chickpeas among the bowls and toss with the corresponding flavor mixtures.
- For set flavor, return the chickpeas coated in sweet mixture to the oven for an additional 5–10 minutes.
- Remove all variations from the oven and let them cool slightly before serving.
