  • 1 teaspoon Dried Italian Herbs mix of basil, oregano, and thyme
  • 1 large Egg as a binder
  • ½ teaspoon Salt vital for seasoning
  • ¼ teaspoon Black Pepper for added heat
  • as needed Olive Oil or Cooking Spray for brushing or spraying
  • to taste Marinara Sauce optional for dipping
  • for garnish Fresh Chopped Parsley optional for color

Method
 

Steps
  1. Preheat your oven to 425°F (or air fryer). Slice zucchini into rounds and sprinkle with salt. Let rest for 10 minutes.
  2. Pat zucchini dry. In one dish, beat an egg. In another, mix Parmesan, breadcrumbs, garlic powder, herbs, pepper, and remaining salt.
  3. Dip each zucchini round in egg, then in breadcrumb mixture, ensuring a good coating.
  4. Arrange zucchini on a wire rack over a baking sheet or in an air fryer basket, lightly spray with oil.
  5. Bake for 20-25 minutes, flipping halfway. For air fryer, cook for 12-15 minutes, shaking basket halfway.
  6. Serve warm with marinara sauce and parsley garnish if desired.
