- Pat zucchini dry. In one dish, beat an egg. In another, mix Parmesan, breadcrumbs, garlic powder, herbs, pepper, and remaining salt.
- Dip each zucchini round in egg, then in breadcrumb mixture, ensuring a good coating.
- Arrange zucchini on a wire rack over a baking sheet or in an air fryer basket, lightly spray with oil.
- Bake for 20-25 minutes, flipping halfway. For air fryer, cook for 12-15 minutes, shaking basket halfway.
- Serve warm with marinara sauce and parsley garnish if desired.
