Preparation Instructions
  1. Wash and dry 2-3 English cucumbers, then slice them thinly, about 1/4-inch thick.

  4. In a separate bowl, whisk together 1/4 cup of extra virgin olive oil, 2 tablespoons of lemon juice, and salt & pepper.
  5. Drizzle the dressing over the salad and toss gently to coat all the ingredients.
  6. Let the salad sit at room temperature for 10-15 minutes before serving.
