- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large mixing bowl, whisk together all-purpose flour, baking soda, ground cinnamon, ground nutmeg, and salt.
- Beat softened unsalted butter and brown sugar until light and fluffy, about 3 to 5 minutes.
- Add eggs, apple cider, and vanilla extract to the butter-sugar mixture and blend until smooth.
