Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large mixing bowl, whisk together all-purpose flour, baking soda, ground cinnamon, ground nutmeg, and salt.
  3. Beat softened unsalted butter and brown sugar until light and fluffy, about 3 to 5 minutes.
  4. Add eggs, apple cider, and vanilla extract to the butter-sugar mixture and blend until smooth.
  5. Gradually mix the dry ingredients into the wet mixture until just incorporated.
  6. Drop rounded balls of dough onto the prepared baking sheet, spaced about 2 inches apart.
  7. Bake for 12 to 15 minutes until edges are golden brown. Allow to cool on the baking sheet.
  8. Melt unsalted butter in a saucepan, then add brown sugar and heavy cream. Bring to a boil and simmer until thickened.
  9. Spread caramel filling on the flat side of one cookie, then top with another cookie to form a whoopie pie.
