Prepare the Cream Mixture
- In a large mixing bowl, beat together mascarpone cheese and heavy cream using an electric mixer on medium speed for about 2-3 minutes until the mixture is smooth and fluffy.
Flavor the Cream
- Add amaretto liqueur, cherry juice, and vanilla extract to the mascarpone mixture. Mix on low speed for 1-2 minutes until fully incorporated.
Incorporate the Sweetness
- In a separate small bowl, stir together granulated sugar and cherry preserves until well blended. Gradually add this mixture to the mascarpone cream and beat for another minute.
Add the Cherries
- Gently fold in chopped fresh cherries into the mascarpone mixture using a spatula until evenly distributed.
Prepare the Dipping Mixture
- In a shallow dish, combine amaretto and cherry juice for dipping the ladyfingers. Mix well.
Layer the Ladyfingers
- Quickly dip the ladyfingers in the cherry-amaretto mixture and layer them in the bottom of a 9×13-inch dish.
Add the First Cream Layer
- Spread half of the mascarpone and cherry mixture evenly over the ladyfingers.
Create the Second Layer
- Repeat the process with another layer of dipped ladyfingers over the mascarpone cream.
Top It Off
- Spoon the remaining mascarpone mixture over the final layer of ladyfingers, spreading it nicely.
Chill and Set
- Cover the dish tightly with plastic wrap and refrigerate for at least 4 hours or overnight.
Serve with Style
- Dust the top of your Cherry Amaretto Tiramisu with cocoa powder and sprinkle shaved or grated dark chocolate just before serving.
