  • 2 cups Crushed Chocolate Chip Cookies or any chocolate cookie or graham cracker as a substitute
  • 1/2 cup Melted Butter or coconut oil for a dairy-free version
For the Chocolate Layer
  • 1 cup Semi-Sweet Chocolate Chips or dark chocolate for a deeper flavor
  • 2 tbsp Coconut Oil or Butter or vegetable oil if needed
For the Cookie Dough
  • 1/2 cup Unsalted Butter make sure it's unsalted
  • 1/2 cup Brown Sugar white sugar can replace it, though
  • 1/4 cup Granulated Sugar coconut sugar can be substituted
  • 1 tsp Vanilla Extract optional but recommended
  • 1 cup Heat-Treated All-Purpose Flour gluten-free flour can be swapped in
  • 2 tbsp Milk non-dairy milk alternatives are suitable
  • 1/2 cup Mini Chocolate Chips use any chocolate type you like
For Garnish
  • 1/4 cup Extra Chocolate Chips optional for decoration

Method
 

Step-by-Step Instructions
  1. Prepare the Crust: Crush chocolate chip cookies to make fine crumbs, mix with melted butter, and press into 6 silicone muffin molds. Freeze for 10-15 minutes until firm.
  2. Make the Chocolate Layer: Melt semi-sweet chocolate chips with coconut oil or butter in the microwave until smooth. Pour over the set crusts and freeze for another 10-15 minutes.
  3. Prepare the Cookie Dough: Beat unsalted butter, brown sugar, and granulated sugar until light and fluffy. Mix in vanilla extract and milk, then gradually add heat-treated flour and fold in mini chocolate chips.
  4. Assemble: Scoop cookie dough onto the chocolate layer in each cup and spread evenly. Sprinkle extra chocolate chips on top.
  5. Chill and Serve: Refrigerate the assembled cups for at least 20 minutes. Serve chilled and enjoy the delightful combination of flavors.
