Step-by-Step Instructions
  1. In a large mixing bowl, cream together softened butter and dry pistachio pudding mix until smooth.
  2. Gradually add sugar, mixing until light and fluffy, about 2-3 minutes.
  3. Add in the eggs, vanilla extract, and almond extract, mixing until fully incorporated.
  4. In a separate bowl, combine all-purpose flour, baking powder, and salt. Fold this dry mixture into the wet ingredients.
  5. Press the dough evenly into a greased 9x13-inch baking pan. Bake at 350°F (175°C) for 20 minutes.
  6. Remove the pan and let the bars cool completely, about 30-45 minutes.
  7. Beat together softened cream cheese and butter until smooth. Gradually add powdered sugar.
  8. Spread the cream cheese frosting over the cooled bars and sprinkle chopped pistachios on top.
  9. Cut into squares and serve.
