- In a large mixing bowl, add rolled oats, almond flour, and protein powder. Mix thoroughly until well combined.
- In a separate bowl, blend softened cream cheese, Greek yogurt, honey, vanilla extract, and salt together until smooth and creamy.
- Gently fold fresh blueberries into the cream cheese mixture, being careful not to crush them.
- Gradually add the dry ingredient mixture to the wet mixture, stirring gently until a dough-like consistency forms.
- Using a tablespoon, scoop out portions of the mixture and roll them into small balls, about 1 inch in diameter.
- Place the rolled protein bites on a parchment-lined baking sheet and refrigerate for at least 30 minutes to firm them up.
- Transfer the bites to an airtight container. Store in the fridge for up to a week or freeze for longer preservation.
