Step-by-Step Instructions for Broccoli Chickpea Pasta
  1. Bring a large pot of salted water to a rolling boil. Cook the pasta according to package instructions until al dente, about 8–10 minutes. Reserve ½ cup of the pasta cooking water, then drain the pasta.
  2. In a large skillet, heat olive oil over medium heat. Sauté minced garlic and red pepper flakes for about 1 minute until fragrant.
  3. Add broccoli florets to the skillet, stirring to coat in garlic oil. Cook for 5–7 minutes until tender-crisp and vibrant green.
  4. Stir in drained chickpeas, vegetable broth, and lemon juice. Simmer for 2–3 minutes, allowing flavors to meld.
  5. Add drained pasta to the skillet, tossing with the chickpea and broccoli mixture. Add reserved pasta water as needed for desired consistency.
  6. Taste and adjust seasoning with salt and pepper. Serve warm, garnished with Parmesan cheese or nutritional yeast.
