Ingredients

For the Cake Mixture
  • 2 cups crumpled cake use leftover cake or half a boxed cake mix
  • 1 cup vanilla frosting store-bought or homemade
For the Coating
  • 2 cups white candy melts may substitute with chocolate melts
  • 1 tbl refined coconut oil optional, to thin out melts for dipping
For the Drizzle
  • 1 cup powdered sugar for festive drizzle
  • 2 tbl water to adjust the consistency
  • 1 tbl red gel food coloring
  • 1 tbl blue gel food coloring

Equipment

  • silicone cakesicle molds
  • microwave-safe bowl
  • Mixing bowl
  • zip-top bag

Method

Step-by-Step Instructions
  1. Begin by crumbling the leftover cake in a large mixing bowl, ensuring there are no large chunks. Mix in vanilla frosting until the mixture reaches a dough-like consistency, about 2-3 minutes.
  2. Take your silicone cakesicle molds and press the cake mixture firmly into each cavity, avoiding air pockets. Insert popsicle sticks into each mold’s center.
  3. Place the molds in the freezer for approximately 30 minutes until solidified.
  4. In a microwave-safe bowl, add white candy melts and heat at 50% power, stirring every 30 seconds until smooth, about 2-3 minutes. Add coconut oil if needed.
  5. Carefully remove the cakesicles from molds and dip each in melted candy coating, allowing excess to drip off.
  6. Mix powdered sugar with water and food coloring for drizzle. Transfer to a zip-top bag, snip a corner, and drizzle over cakesicles.
  7. Place the decorated cakesicles on parchment paper and let them set at room temperature until hardened, about 15-20 minutes.
