  3. In a skillet over medium-high heat, heat olive oil. Add chicken and cook for 6-8 minutes until golden brown and reaches an internal temperature of 165°F (75°C).
  4. In a small bowl, whisk together tahini, lemon juice, and water until smooth.
  5. Layer cooked brown rice in a bowl, add roasted sweet potatoes and sautéed chicken, then drizzle tahini sauce.
