Step-by-Step Instructions
  1. Begin by placing the pitted Medjool dates in a bowl and covering them with hot water. Let the dates soak for about 10 minutes, which will soften them and enhance their blending.
  2. In a powerful food processor, add the soaked dates, almond butter, pecans, vanilla extract, chia seeds, cocoa powder, and a pinch of salt. Blend all the ingredients together until a thick, sticky batter forms, scraping down the sides as necessary.
  3. Check the consistency of your energy bite mixture. If you find it too dry or crumbly, slowly add a bit of water—about one tablespoon at a time. Blend again until the dough easily sticks together.
  4. Transfer the blended mixture into a bowl and spread it out evenly. Cover the bowl and place it in the refrigerator for about 1 hour.
  5. Once the mixture has chilled and firmed up, take it out of the refrigerator. Scoop out small portions of the mixture, about a tablespoon each, and roll them into balls using your hands.
