Step-by-Step Instructions
  1. Begin by soaking 10 Medjool dates in warm water for about 10 minutes if they're not soft enough. Once softened, drain them thoroughly and set aside.
  2. In a food processor, combine the soaked dates with 1 cup of rolled oats, 1/2 cup of nut butter, 1 scoop of protein powder, and any optional ingredients like 2 tablespoons of cocoa powder or shredded coconut. Add a splash of vanilla extract and a pinch of salt, then process until the mixture is well combined.
  3. Pulse the mixture for an additional 1-2 minutes, scraping down the sides as necessary, until the dough is sticky yet firm.
  4. Taste the mixture for sweetness and adjust with more honey or maple syrup if desired. Pulse again to combine.
  5. With clean hands, scoop about a tablespoon of the mixture and shape it into 1-inch balls. You should have around 12-15 protein balls.
  6. Place the rolled balls onto a parchment-lined tray and refrigerate for at least 30 minutes to firm up.
  7. Once chilled, transfer your Date Protein Balls to an airtight container. They can be stored in the refrigerator for up to one week.
